On the manufacturing side, Christina Lee Knauss has a fascinating look at how the tiny town of Saluda (population 3,122) became the ramen noodle capital of North America, as Palmetto Gourmet Foods produces millions of pounds of one of the most popular foods in the world.

Inside the plant along U.S. 378 the company, a subsidiary of Borealis Foods, which was founded in 2019 by Reza Soltanzadeh, has created a new way of producing and thinking about the future of the quick-serve noodles, Knauss reports.

Palmetto Gourmet Foods currently produces the Ramen Express and Chef Woo product lines, which are available in more than 15,000 retailers nationwide including Walmart and Costco.

Right here in South Carolina.

On a related note, you’ll meet 12 difference-makers in the manufacturing industry through our Power List feature. Switching gears, Knauss features the innovation behind Peculiar Pig Farm in Dorchester, which this summer was named one of 12 agricultural entrepreneurs to receive funding through the South Carolina Department of Agriculture’s Agribusiness Center for Research and Entrepreneurship, also known as ACRE.

Finally, we celebrate South Carolina’s Best Places to Work honorees — all 111 of them – inside these pages. I had the pleasure of co-hosting our Best Places award celebration in August at the Columbia Metropolitan Convention Center.
